Chucks Pineapple Banana Bread 12-1-2012 Cook Time 1 hour, 30 minutes but check with a toothpick/uncooked noodle at 1hr 15min. Ingredients: 3 cups plain flour unbleached 2 cups sugar (brown & white mix) 3/4 cup actually needed 1 tsp. baking soda 1 tsp. cinnamon 1 cup chopped nuts (walnuts, pecans, or macadamia) 2 tsp. vanilla 3 eggs, beaten 1 1/4 cups vegetable oil 3/4 cup actually needed 2 cups mashed bananas (at least 4 bananas per half recipe) 1 (8oz.) can of crushed pineapple or chunks or rings cut up (well drained but same juice in case you need liquid at end) Preparation: In a large bowl combine flour, sugar, baking soda and cinnamon. Stir in nuts. Set aside. Combine remaining ingredients in another mixing bowl; blend well. Pour wet ingredients into dry ingredients and stir until just moist. Pour into 2 greased and floured loaf pans. Bake at 350 deg. for approximately 1 hour 30 minutes. Check center of loaf with toothpick or uncooked spaghetti strand and if it comes out clean, it's done. Cool 10 minutes before removing from the pan.
